My husband and I are soup lovers and this is one that I make a lot. We love it. Hope you all enjoy it as well.
Crockpot Italian Soup
1 onion chopped
4-6 cloves of garlic crushed
Package of mild Italian sausage-- I mix a little of hot in with the mild
3-4 red skin potatoes, peeled and cubed into pieces
1 900 ml chicken broth
1 cup if half & half cream
2 Tbsp. flour
1 can of niblets corn drained
2 cups of fresh Kale shredded
Uncase sausage and break into pieces. Fry sausage, onion & garlic
Put sausage mixture in crock pot with diced potatoes, corn & chicken broth. Season with salt & pepper to taste. Cook for 4 hours on high or 8 hours on low.
Half hour before serving, mix cream & flour together with whisk, add to crock pot. Add Kale to crock pot.
When serving, top off with fresh parmesan flakes
