This recipe for guacamole is not only delicious but healthy too. As we were all transitioning to working from home I found myself snacking more than actually eating meals and I wanted some options that were healthy but delicious. This became my favourite lunch/snack during the first few months of the COVID-19 lockdown. It has now become a favourite.
Note--the chips are also healthy: sliced zucchini and pepper. I add the nuts as protein to balance the meal. This is low sodium and keto friendly.
2 ripe avacado, mashed with fork or blender
½ teaspoon of garlic powder or chopped garlic
1 teaspoon of lemon or lime (I like the lemon)
½ teaspoon of chili powder
Optional add ins--diced tomato and jalapeno
Some add salsa but I am a bit of a purist.
